Serve: 3 persons
750-800 ml boiling water
100-110 gm (high fat) Coconut milk (use white FAT only discard water)
Pinch of chilli flakes (if you want it spicy)
Ingredients B (per 1 diner):
45 gm Choi Sim
45 gm bean sprout
130-140 gm cooked vermicelli
40-55 gm (3-4pieces) fresh prawns (defrost if frozen) or tofu- cubed or prawn seitan-slice
1 hard-boiled egg (quartered) - optional
80 gm chicken breast - thinly slice or Quorn cubes-defrost
Coriander to garnish
Pinch of salt
Pinch of pepper
Slice of lime or lemon- optional
In a pot add Ingredients A and leave to simmer.
Add salt and pepper.
Once simmering, add chicken breast (or Quorn) and fresh prawns (if using raw) and cook for a few seconds.
Once cooked, add Choi Sim, prawns (if using cooked, defrosted) or Tofu/prawn seitan, bean sprout, vermicelli; stir until simmer.
Scoop out into a bowl.
Repeat for the next 2 diners.
Scoop soup and pour into the 3 individual bowls.
Garnish with coriander.
Serve with eggs and lemon or lime if use.
